Bacon and Mushroom Rice

2 Person - Bacon and Mushroom Rice

Ingredients

 

o   200g

Bacon Pieces

o   1/2

Onion

o   1

Garlic Cloves, diced

o   100g

Mushrooms

o   100g

Green Beans

o   1

Carrots

o   1.5 cups

Rice

o   1/2 Packet

Creamy Pasta Seasoning

o   2 cups

water

   

Pantry Staples

 

o   1 Teaspoon

Butter or oil

o    

Salt and Pepper

 

Method

1.   Add the butter or oil to a large frying pan

2.   Add the bacon pieces, sliced onion and crushed garlic cloves to the frying pan. Brown for 6-8 minutes

3.   Slice the mushrooms, add to the frying pan

4.   Peel the carrots and dice into small chunks and add to the frying pan

5.   Add the uncooked rice to the frying pan

6.   Combine the packet of creamy pasta seasoning with water and add to the frying pan. Stir and cover the frying pan with a lid. Simmer over a low heat for 15-20 minutes

7.   Stir occasionally and add extra water if the rice is absorbing the liquid too quickly

8.   Place the beans in a small pot with 1 cup water. Bring to boil with lid on and cook for 5 minutes. Drain. Serve with the rice.

9.   Season with salt and pepper to taste.
