Beef Curry
2 Person - Beef Curry
1. In a pot or rice cooker add 1 cup of rice and 2 cups of water.
|
2. Add diced onion with oil to a large pan with one tablespoon of curry spice. Cook on medium heat for 5-6 minutes or until soft
|
3. Add can of tomatoes and cook for 10-15 minutes till the mixture sticks to the pan
|
4. Add butter, coconut cream, vegetable and beef stock with 1/2 a cup water
|
5. Bring mixture to a simmer then add the beef chunks.
|
6. Continue to cook the curry for 15-20 minutes, always check the meat is cooked through before serving
|
7. Cook green beans in a pot of boiling water for 2-3 minutes until the beans are soft
|
8. Serve beans alongside the curry and rice.
