Cajun Spiced Chicken

2 Person - Cajun Spiced Chicken

Ingredients

 

250g

Chicken breast

1 Tablespoons

Mexican Spice Mix

Capsicum

1 Tablespoon

Method:

1.   Wash and peel potatoes and carrots. Slice into quarters and place in a bowl.

2.   Cut the capsicums and onion into large chunks. Add to the bowl. Add oil and toss to coat. Season with salt and pepper.

3.   Spread out on a greased oven tray and cook for 40 minutes.

4.   Cut the chicken into strips. Place in a large bowl.

5.   Combine the seasoning mix with 1/2 teaspoon salt and ¼ cup flour. Add to the bowl with the chicken strips. Toss to coat in the seasoning mix.

6.   Heat 1 tablespoon oil in a large pan, over medium heat. Cook the chicken in batches, turning frequently so cooked and browned on all sides.

7.   Peel the corn and cut into thirds. Place in a pot. Cover with water. Boil with lid on for 10 minutes, or until tender. Wash and chop the lettuce.

8.   Serve the chicken with the lettuce, corn and roasted vegetables. Add mayonnaise and chilli sauce if you wish.

 

Top tip: Cook your sweetcorn in the microwave in its husk! - leave all the husk on and pop in microwave for 3 minutes on high, it will steam perfectly in the skin. Make sure it can turn freely so it cooks evenly.
