Chicken and Mushroom Stroganoff

2 Person - Chicken and Mushroom Stroganoff

Ingredients

 

o   250g

Chicken Breast

o   75g

Mushrooms

o   1/2

Onion (80g)

o   1

Cloves Garlic

o   1

Creamy Pasta Seasoning

o   1/2 pottle

Sour Cream

o   150g

Pasta

o   1/2

Broccoli

o   1/2

 

Lemon

 

Pantry Staples

 

o   1 Tablespoon

 

o   1/2 Cup

Water

 

Method

1.   Slice the mushrooms and onions, and peel and finely chop the garlic.

2.   Bring a large saucepan of water to the boil (preparation to cook the pasta)

3.   Add the pasta to the saucepan of boiling water and cook for 8-10 mins, drain the water once cooked

4.   Slice the chicken into 2cm strips and place in a mixing bowl with the creamy pasta seasoning mix.

5.   Heat oil in a medium frying pan over a high heat, add the mushrooms, onion and garlic and fry for 4 minutes, or until softened and lightly golden, stirring occasionally.

6.   Add the chicken and fry for 5 to 6 minutes, or until golden and cooked through, stirring frequently. Add the water.

7.   Chop broccoli into florets and place in a pot with 1 cup of water. Bring to boil with lid on and cook for 5 minutes. Drain the water and set aside.

8.   Remove pan from the heat, stir in the sour cream, squeeze in the lemon juice and season to taste. Serve over the pasta.
