Chicken and Pumpkin Tray Bake

2 Person - Chicken and Pumpkin Tray Bake

Ingredients

 

o   500g

Chicken drumsticks

o   1/4

Pumpkin

 

Spinach

o   2

Cloves garlic

o   1/2

Onion

o   1

Roast Veg spice mix

o   2 Medium

Potatoes

Pantry Staples

 

o   1 Tablespoons

Oil

o   2 Tablespoons

Dijon Mustard or 1 tsp mustard powder

 

Salt + pepper

 

Method

1.   Preheat oven to 200℃.

2.   Dice onion and garlic. Cut pumpkin and potatoes into large chunks and place into a large oven tray.

3.   Add the chicken drumsticks to to the baking tray.

4.   Pour the spice mix into a small bowl and add oil and dijon mustard, mix together.

5.   Pour the mixture over the meat and veggies and toss to coat everything.

6.   Cook in oven for 40 minutes, or until chicken and veggies are cooked through.

7.   Add spinach to the tray about 5 minutes before everything is cooked.

8.   Season to taste, with salt and pepper before serving.
