2 Person - Creamy Bacon Potato Bake

Ingredients

 

o   3 -4 Large

Potatoes

o   200g

Shoulder bacon

o   1

Onion

o   1

Garlic Cloves

o   1

Packet of Creamy Pasta Seasoning

o   125g

Sour Cream

o   100g

Green Beans

 

 

Pantry Staples

 

o   1 Tablespoon

Butter

o   1/2 cup

Milk

o   1/2 cup

Cheese, grated

 

 

 

Method

1.   Preheat the oven to 180°C

2.   Peel the potatoes and dice into quarters. Boil the potatoes in a large saucepan of water for 15 minutes. Drain the water once cooked

3.   Add the bacon pieces to a large frying pan with the diced onion and crushed garlic cloves. Brown for 6-8 minutes

4.   Add the cooked potatoes to a large ovenproof dish with the bacon, onion and garlic

5.   Add the packet of creamy pasta seasoning, sour cream, melted butter and milk to a bowl and stir with a fork to combine

6.   Pour the milk mixture over the potatoes; season with salt and pepper

7.   Grate the cheese and sprinkle it over the potatoes; bake in the oven at 180°C for 30-35 mins

8.   Slice the beans and add to a pot with 1 cup water, bring to a boil and cook for 5 minutes. Drain and serve.
