Crumbed Beef Schnitzel

2 Person - Crumbed Beef Schnitzel

Ingredients

o   250g Beef Schnitzel

o   2 Large Potatoes

o   1 Parsnip

o   1 Carrot

o   1/2 cup Breadcrumbs*

o   1/2 Broccoli

 

Pantry staples

o   1/4 cup Flour*

o   1 Egg

o   1 Teaspoon Oil

o   Salt and pepper

 

 

Method

1.   Preheat oven to 200℃

2.   Peel and slice the carrot and parsnip into chips. Place in a greased oven tray with oil. Cook for 30 minutes, or until tender and golden. Season to taste.

3.   Set out 3 bowls. In one bowl beat the egg, in another bowl place the flour and the other the breadcrumbs.

4.   Take each piece of schnitzel and coat in the flour, then egg, then breadcrumbs.

5.   Place on a baking tray lined with baking paper. Drizzle with oil and sprinkle with salt and pepper.

6.   Cook in the oven for 20 minutes, turning half way. Remove when cooked through, browned and crispy.

7.   Peel the potatoes and dice into quarters. Place in a large pot and cover with water. Bring water to a boil. Cook on high heat for 10 - 15 minutes, or until very soft. Drain well, then mash with the butter / oil or dairy free spread, until smooth. Season to taste.

8.   Chop broccoli. Place in a pot with 1 cup of water. Bring to boil with lid on and cook for 5 minutes. Drain the water and serve.
