2 Person - Gatherer's Pie

Ingredients

Method:

1.     Preheat Oven to 220c.

2.     Add quartered mushrooms, bacon and 1 tablespoon oil to a large pan on medium high heat, slice 1 onion add to the pan once the mushroom is golden

3.     Peel Carrots and Kumara before cutting into 3cm and 2cm chunks

4.     Start a pot of boiling salted water, then add peeled vegetables.

5.   Crush the garlic cloves then add to the pan, with the spinach, 1 can chopped tomatoes, 1 can red kidney beans, make sure you strain and wash the beans, first.

6.     Lower the heat then add two teaspoons of beef stock mix along with 250 ml of water and bring whole mixture to a boil

7.     Strain the carrot and Kumara, then add to the pot and continue to simmer on low heat.

8.     To a pot of cold water add the potatoes, quartered and bring to the boil. Once cooked through drain and mash in a bowl with 2 tablespoons butter

9.     Add the stew to a deep roasting dish and top with mashed potato, then bake in the oven 15-20 minutes

10. Serve
