2 Person - Grilled Chicken with Creamy Sauce

Ingredients

 

o   250g

Chicken Breast

o   1/2

Creamy Pasta Seasoning

o   150ml

Cream

o   170g

Green Beans

o   1 Large

Potato

o   1 Small

Kumara

Pantry Staples

 

 

Oil

 

Method

1.   Preheat the oven to 180°C

2.       Wash and peel the potatoes and kumara. Slice into quarters, toss in oil and season with salt and pepper. Place on a non-stick oven tray and cook for 40 minutes.

3.   Slice the chicken breast in half, lengthways, to make 4 chicken fillets. Season with salt and pepper

4.   Heat oil in a frying pan over a high heat. Add chicken to pan and cook for 5 minutes on both sides, or until browned and cooked through. Remove from pan and set aside. Turn the heat down to low

5.   Add the seasoning mix to a bowl with the cream, stir to combine

6.   Add the cream mixture to the frying pan and heat until it is bubbling and thick. Add chicken back to pan to cook for a further minute in the sauce

7.     Place beans in a pot with 1 cup of water. Bring to boil with lid on and cook for 5 minutes. Drain the water and set aside.
