Honey Soy beef Stir Fry

2 Person - Honey Soy beef Stir Fry

Ingredients

o   200g

 

Beef Strips

o   1/2

Onion

o   1

Carrots, peeled and sliced

o   1/2

Broccoli, chopped into florets

o   1/2

Capsicum, diced

o   1

Cup Rice

o   1

 

Clove’s garlic, minced or finely diced

 

Pantry Staples

 

o   1 Tablespoons

Oil

o   1 Tablespoons

Soy sauce*

o   1 Tablespoons

Honey

o   2 Cups

Water

o   1 Teaspoon

Corn flour

 

Method

1.   Combine rice and water in a pot and bring to the boil. Once boiling stir, and cover with a lid and reduce to lowest heat to cook for 8 minutes. Turn off heat and steam, covered (do not lift the lid), for 5 more minutes. Fluff with a fork and set aside.

2.   Prep the veggies, as listed above. Chop the meat into thin slices.

3.   Combine the soy sauce, honey, garlic, salt and pepper and 2 tablespoons of oil in a container or bowl.

4.   Heat 1 Tablespoon oil in a large pan or wok. Add the beef in batches and brown. Once browned, remove from the pan and set aside.

5.   Add the vegetables to the pan and cook over a medium heat for 5 minutes. Add a splash of water if you need, to help them steam. Discard excess water.

6.   Add the meat back into the pan with the vegetables. Pour in the sauce ingredients. Simmer for 3-4 minutes, or until heated through. Mix 1 Tablespoon corn flour with 1 Tablespoon water and add to the pan with the sauce. Cook everything for 3-5 minutes, or until the sauce has thickened and everything is coated. Season to taste.

7.   Serve with rice.
