Wash, peel and slice potatoes into chips. Spread out on an oven tray and drizzle with oil. Season with Salt. Bake in the oven for 30 minutes, turning twice, or until cooked through and golden.
Place the mince in a bowl with the Mexican seasoning mix and an egg. Thoroughly combine using a wooden spoon, or your hands.
Shape into meat patties.
Place the carrots, cabbage and red onion in a bowl together.
Heat a large pan over medium heat. Add a drizzle of oil and place the patties in the pan, cook on each side for 5 minutes, or until golden, then flip. Remove from pan when cooked through. You could also place them in the oven with the chips, to finish off. Cook the remaining meat patties in batches until they are all cooked.
When the potatoes are cooked, assemble your burgers with patties, salad, cheese and mayonnaise.
