Mexican Rice

2 Person - Mexican Rice

Ingredients

 

o   200g

Beef Mince

o   1/2

Onion

o   1

Mexican Seasoning Mix

o   1

Tin of Chilli Beans

o   1/2

Tin of Tomatoes

o   1

Carrots

o   1 Cup

Rice

o   100g

Green Beans

o   1

Corn Chips

 

 

Pantry Staples

 

o   2 Cups

Water

 

Method

1.   Prep the veggies - finely grate the carrots. Slice green beans. Finely dice the onion and garlic.

2.   Add the oil to a large pot, set to medium heat. Add the onions and garlic and fry for 2-3 minutes. Brown the mince, add the spice mix and stir through over the heat for a few minutes.

3.   Add the grated carrots, beans, chilli beans, rice, tomatoes and water. Cover and simmer over a low heat, stirring occasionally, for 10-15 minutes, or until the rice is cooked.

4.   Add the salt and pepper to taste and grated cheese if you wish. Serve with the Corn Chips.

5.   This is a mild, family friendly dish - add chilli powder or flakes to taste, after serving, if you like it spicy.
