Moroccan Chicken Drumsticks

2 Person - Moroccan Chicken Drumsticks

Ingredients

o   500g                           Chicken Drumsticks

o   1/4                               Lettuce

o   2                                 Carrots

o   2 Large                       Potatoes

o   1/2                               Moroccan Spice Mix

 

Pantry Staples

o   1/8 Cup                       Flour

o   1 Teaspoon                 Brown Sugar

o   1 Tablespoon             Oil

o   2 Tablespoons             Mayonnaise

o                                       Salt and Pepper

Method

1.   Preheat oven to 200°c fan bake.

2.   Wash and peel the potatoes. Toss in 1 Tablespoon oil, season with salt and pepper and place in an oven tray. Roast for 30 - 40 minutes, or until browned and crispy on the outside.

3.   In a small bowl mix the moroccan seasoning with the sugar and flour. Place the chicken in a large bowl and coat in 1 Tablespoon oil. Add the moroccan spice mix and toss to coat.

4.   Place in an oven dish and cook in the oven for 35 minutes, checking halfway and turning the drums over.

5.   Peel and slice half the carrots. Place carrots in a pot with 1 cup of water. Bring to boil with lid on and cook for 5 minutes. Drain the water and set aside.

6.   Peel and grate the remaining carrots. Finely slice the cabbage. Toss together, add mayonnaise if you wish.
