Porcupine Meatballs

2 Person - Porcupine Meatballs

Ingredients

 

o   250g

Pork Mince

o   1

Mince Seasoning

o   1 Tablespoon

Breadcrumbs*

o   1/4 cup

Rice

o   1/2

Onion

o   1

Garlic Cloves

o   1

Tin Tomatoes

o   100g

Green Beans

o   1/2

Broccoli

 

Rice

 

Pantry Staples

 

o   1/4 Cup

Water

 

Salt & pepper

o   1 Egg

 

 

 

Method

1.   Place the mince in a large bowl with the breadcrumbs, egg, rice and 1 mince seasoning mix, plus 1/4 teaspoon sea salt. Mix together with your hands until well combined. Scoop out tablespoon sized portions of mince, and roll into balls.

2.   Chop the onion and garlic and fry in a large pan, in the oil for 2 minutes. Add the meatballs and brown for 5 minutes.

3.   Add the tinned tomatoes and water. Stir to combine. Lower heat, place the lid on. Let the meatballs gently simmer in the sauce for 20 minutes, or until cooked through. Season to taste.

4.   Place the second measure of rice in a pot and cover with water, bring to the boil and cook for 10 minutes, or until cooked.

5.   Chop the broccoli. Place broccoli and beans in a pot with 1 cup of water. Bring to boil with lid on and cook for 5 minutes. Drain the water and set aside to serve with the meatballs.
