Satay Beef Stir Fry
2 Person - Satay Beef Stir Fry
Method:
1. Prep the veggies, as listed above. |
2. Combine the soy sauce, honey or sugar, garlic and peanut butter, in a container or bowl. |
3. Heat 1 Tablespoon oil in a large pan or wok. Add the beef in batches and brown. Once browned, remove from the pan and set aside. |
4. Add the vegetables to the pan and cook over a medium heat for 5 minutes. Add a splash of water if you need, to help them steam. After 5 minutes, discard excess water. |
5. Add the meat back into the pan with the vegetables. Pour in the sauce ingredients. Simmer for 3-4 minutes, or until heated through. Cook everything for 3-5 minutes, or until the sauce has thickened and everything is coated. Season to taste. |
6. In a large bowl, Cover the vermicelli noodles in boiling hot water and leave to soften for 5 minutes. Drain and serve with the stir fry. |
7. *If you like it really peanut buttery you can up an additional 1-2 tablespoons peanut butter. |
Top tip: Sesame oil, chilli flakes, fresh coriander and crushed peanuts are delicious additions to this dish - if you have them handy add one, or all of them! |
